Pickling spice is a type of seasoning used in cooking and canning, typically to make foods that are "pickled", such as dill pickles and sweet pickles.  It can also be added to the salt water when brining meats for extra flavor (known as pickled meats).  Our pickling spice is a mixture of many spices, including black pepper, allspice, cloves, annato seed, bay leaf, cassia, and japanese chili.
